Right now, it's 3:47 am. I have had my pork butt on the Primo since 7:30 pm. I'm about to get out of bed and check it out but rather expect that t 205deg, the internal temp will be at bout 160 or so. Still 30 odd egress to go. I've done this before and let me tell you, there is no comparison between butt done on primo and the same meat on a steel BBQ. After the butt, I'm doing a turkey at 325 for as long as it takes. I've got 22 people coming over for Canadian thanksgiving later today.
